From tree to cold-press – speed is of the essence.
The quality of the organic extra virgin olive oil is dependent on the time of harvesting, the hand-picking, and the speed with which taking the olives from the olive grove to the factory and then cold-pressed – all during the same day. The unique taste and aroma is derived from the cold-pressing of the olives, giving an acidity who is less than 0,8 %.
To keep up the speed taking the olives from the tree to oil in one day,
we always start the harvesting early in the morning and ensure that they are
transported and cold-pressed into olive oil the same evening.

Hand picking olives
Hand-picking olives is no easy task. Each branch must be shaken, using a special type of whisk, so that the ripe olives can fall and be collected in the net before they hit the ground.

Preparation for cold pressing
As soon as the olives are delivered for cold-pressing they are washed, removing all stray leaves and stems.

Once the olives are cleaned and free of strays and leaves, they are “sent” into the press process of the olive oil for cold pressing.

During the slow cold-pressing the aroma rising from the olives is simply wonderful, as is the colour of the oil as it pours from the press into a steel container, that will then hold the oil until it is cooled down – and before bottling.
